🧂 Ingredients
1 kg pork belly (liempo), cut into chunks
1/2 cup soy sauce
1/2 cup cane or white vinegar
1 head garlic, crushed
2 tsp whole black peppercorns
4–5 pcs bay leaves
1–2 tbsp brown sugar (optional)
1 1/2 cups water
Salt to taste
2–3 tbsp cooking oil
👨🍳 Cooking Steps
1. Marinate pork in soy sauce, garlic, and pepper for at least 30 mins
2. Heat oil and sauté pork until lightly browned
3. Add vinegar (do not stir), boil 2–3 minutes
4. Add water, bay leaves, and brown sugar (optional)
5. Simmer for 45–60 minutes until pork is tender
6. Reduce sauce uncovered until thick and flavorful
7. Adjust taste with salt or sugar if needed
8. Serve hot with steamed rice
